Freezing Zucchini - grind, squeeze, & scoop

I like to grind the garden zucchini that grow too large for a one pan saute. It is quick and easy. It takes the squash from the garden to the freezer in less than an hour.
- wash and trim ends
- set up the grinder (I use Kitchen Aid's grinder attachment, love it!)
- clip paper towel to tray to keep the counter clean
- drape a cotton flour sack towel over catch bowl
- grind away
- gather towel ends and squeeze all the juice you can from the ground zucchini
- scoop zucchini onto lined cookie pan and freeze until solid
- store in freezer bags

My scoop measures 1/3 cup. It is so easy to add to any recipe in the future. Oh, don't throw away that zucchini juice. We drink it and use in soups. (It doesn't last long enough to freeze any.)

For next summer I hope to have designed a series of printable labels for all the gifts that we give from the kitchen. Zucchini bread is always a treat, putting a cute little label on the wrapped loaf will make it a tad more special. Look see!
